Pour the cookie mixture and cinnamon into a bowl. Add 1 egg and 60 g of soft butter and mix until the dough is smooth and even. Roll out the dough between two pieces of baking paper. The dough should be approx. 3-4 mm thick. Use a cutter to shape the cookies in the shapes that you like. Remove the middle from half of the cookies by using a cutter. Bake the cakes at 180 °C for 10 minutes. Spread Nicolas Vahé Jam with Raspberry and Ginger between the cookies. Make sure that you fill the entire hole in the middle with delicious jam. Bake the cookies for an additional 5 minutes. Enjoy with a nice cup of freshly brewed coffee or tea.
